35-Minute Beef & Rice Skillet
This quick and easy one-pan meal can be prepped in about 35 minutes. It’s perfect for a fast lunch or weeknight dinner.
Ingredients
- 4 cups of water
- 2 cups of uncooked rice
- 1 lb of ground beef
- 1 (15 oz) can of green beans, drained
- 1 (15 oz) can of corn, drained
- 1 (15 oz) can of tomato sauce
- 1 tbsp of Mercy Chefs Cajun Joy
Instructions
Step 1:
Bring 4 cups of water to a boil in a large pot. Add 2 cups of uncooked rice, cover, and reduce heat to low. Cook for 15 minutes without removing the lid until the water is fully absorbed.
Step 2:
While the rice cooks, brown 1 pound of ground beef in a large skillet over medium heat for 8–10 minutes, breaking it up as it cooks. Drain excess fat.
Step 3:
After cooking, let the rice stand covered for 3 minutes; then arrange the rice in a ring on a serving platter and set aside.
Step 4:
Add 1 can of green beans, 1 can of corn, 1 can of tomato sauce, and 1 tablespoon of Cajun Joy to the skillet with the cooked ground beef. Cook over medium heat until heated through and steaming hot.
Step 5:
Spoon the beef and vegetable mixture into the center of the rice ring. Serve warm.
