Chicken Salad with Onion & Relish
This flavorful chicken salad gets a crunchy texture from celery and onion. The relish adds a tangy kick.
Ingredients
- 2½ cups of cooked, diced chicken*
- ½ cup of chopped celery
- ¼ cup of chopped onion
- 2 tbsps of pickle relish**
- ½ cup of light mayonnaise
- 2 teaspoons of Mercy Chefs Cajun Joy (optional)
Instructions
Step 1:
In a medium bowl, combine the chicken, celery, onion, relish, and mayonnaise. Stir to combine.***
Step 2:
Refrigerate for 30 minutes to allow flavors to blend.
Step 3:
Serve on bread, lettuce, or crackers. This dish is also delicious topped on pasta or stuffed in a tomato or cucumber.
Step 4:
Store leftovers in the refrigerator for up to 2 days.
*Tuna can be substituted for the Chicken
