Festive Pork Tenderloin
Ingredients
- 2 pork tenderloin
- 1 medium onion, thinly sliced
- 1 green bell pepper, seeded and sliced*
- 1 red bell pepper, seeded and sliced
- ⅛ tsp of black pepper
- ¼ tsp of salt
Instructions
Step 1:
Trim the excess fat from the pork tenderloin. Place it in a 13x9-inch baking dish.
Step 2:
Top the tenderloin evenly with the onion and peppers. Sprinkle it with black pepper and salt.**
Step 3:
Refrigerate for 1 hour to marinate.

Step 4:
Preheat the oven to 375°F.
Step 5:
Bake tenderloin covered for 30 minutes. Uncover and flip, and then top again with onions and peppers.
Step 6:
Bake uncovered for 15 more minutes until tenderloin reaches an internal temperature of 155°F. Let it rest for 5 minutes before slicing.
Step 7:
Slice the tenderloin into half-inch slices. Garnish with the peppers and onions before serving.
*Try different color bell pepper combinations like orange and yellow.
**Pork pairs well with fresh herbs like rosemary or thyme, too.
