One Skillet Chicken & Rice Dinner
This easy one-pan meal features chicken and rice cooked together with colorful veggies for a hearty weeknight dinner.
Ingredients
- 2 tbsps of olive oil
- 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces*
- 1 green bell pepper, chopped
- 1 onion, diced
- 3 garlic cloves, minced
- 1 bay leaf
- 1 can of diced tomatoes
- 1 cup of cream of chicken
- 1 cup of chicken stock or water
- 1 cup of uncooked rice**
- 1 can of mixed vegetable
- Salt and pepper to taste
Instructions
Step 1:
In a large skillet, heat the olive oil over medium heat.
Step 2:
Add the chicken pieces and cook for 3–4 minutes until lightly browned.
Step 3:
Stir in the bell pepper, onion, and garlic. Cook for 5 minutes.
Step 4:
Add the tomatoes, cream of chicken, water, bay leaf, and season with salt and pepper.
Step 5:
Bring to a boil; then cover and cook for 20 minutes.
Step 6:
Stir in the rice, cover, and simmer for 20–30 minutes until liquid is absorbed.
Step 7:
Add the can of mixed vegetables and cook until heated through about 5 minutes. Enjoy! Leftovers can be refrigerated for up to 4 days.
*Turkey breast or chicken thighs can be substituted for the chicken breast.
**You can also try basmati or jasmine rice for extra flavor.
***This can be topped with freshly chopped parsley or cilantro.
