Smoked Sausage with Steak Fries, Roasted Carrots and Spicy Ketchup

Ingredients

  1. 1.5 pkgs Smoked Sausage, cut in 1” slices
  2. 2# Russet Potatoes, washed well and cut in long wedges
  3. 1# Carrots, peeled and cut in long slices
  4. 2 T Canola Oil
  5. 1 t Kosher Salt
  6. ½ tsp Black Pepper
  7. ½ t Granulated Garlic
  8. As needed Pan Spray
  9. 1 cup Ketchup
  10. 1 T Sriracha
  11. ½ t Cajun seasoning

Directions

Step 1:
Pre-heat oven to 400°.

Step 2:
In a large bowl, add cut potatoes and carrots, canola oil, salt, pepper, and garlic. Toss together so potatoes and carrots are well coated. Use pan spray to grease a flat pan, spread out seasoned potatoes and carrots in a single layer and put in oven. Cook until potatoes are tender, about 20 minutes.

Step 3:
Spread cut sausage out on a flat pan and place in the oven. Cook until edges of sausage are browned and it is heated through.

Step 4:
While potatoes and Sausage are in the oven, mix ketchup, Sriracha, cajun seasoning and a pinch of salt in a bowl. Save until the rest of the food is ready.

Step 5:
When sausage is ready take out of oven and turn oven on to Broil – Low. Leave potatoes and carrots in until potatoes are golden brown, about 5 minutes.
