Braised Beef Tacos with Spiced Black Beans

Ingredients

  1. 2 T Canola Oil, divided
  2. 2# Beef Chuck Roast
  3. 2 t Cajun Seasoning, divided
  4. 1 t Cumin
  5. To Taste Kosher Salt and Black Pepper
  6. 3/4 ea Large Yellow Onion, Diced, divided
  7. 3 cloves Garlic, Chopped Fine, divided
  8. 2 cups Beef Stock
  9. 1 can Black Beans
  10. 8 ea 6” Tortillas
  11. 4 oz Shredded Cheddar
  12. ½ cup Salsa
  13. ½ bunch Cilantro, chopped

Directions

Step 1:
In a large pan, place 1 T of canola oil. While pan is heating up, season beef well with 1 t Cajun seasoning, 1 t cumin, salt and pepper. Add seasoned meat to hot pan and brown on one side until meat is deep brown. Flip meat and brown well on the other side, remove from pan.

Step 2:
Add 1.5 cups of onion to the beef pan and cook until onions turn clear, about 2 minutes. Add 1 T chopped garlic to the pan and cook an additional 30 seconds. Add stock and 2 cups of water to pan, move spoon around until flavor comes off of the bottom of the pan. Place meat in crockpot, pour liquid over it and cook on low until tender, at least 4 hours.

Step 3:
When beef is tender, reserve 1 cup of cooking liquid and pull remaining meat in shreds.

Step 4:
In a small pot, add 1 T of canola oil and remaining onions, cook until onions turn clear. Add remaining garlic and 1 t Cajun seasoning and cook an additional 30 seconds. Add black beans and bring to a simmer, cook until beans are flavorful.

Step 5:
As beans are cooking, heat beef in a small pot with cooking liquid, 1 t of cumin and 1 t cajun seasoning. Heat until flavors come together.

Step 6:
When beans are ready, warm tortillas in the microwave. Divide Shredded beef evenly among tortillas, garnish tacos with salsa, shredded cheddar and cilantro.
