Grilled Cheese with Tomato Soup

Ingredients

  1. 4T Butter, divided
  2. 1/2 ea Yellow Onion, diced
  3. 2 ea Garlic Clove, chopped fine
  4. 1 T Italian Seasoning
  5. 2 T All-Purpose Flour
  6. 8 oz Half & Half
  7. 1 can Crushed Tomatoes (28 oz)
  8. To Taste Kosher Salt and Pepper
  9. 8 slices Honey Wheat Bread
  10. 8 slices American Cheese

Directions

Step 1:
Heat butter over medium heat in a sauce pot. Add onion, cook until onions start to tenderize, and then add garlic and Italian seasoning to pot and cook for another 30 seconds. Sprinkle flour in pot and stir constantly until a blond paste forms. Cook 1 minute.

Step 2:
Turn heat down to medium low and whisk in half and half and, stirring constantly, bring to simmer over medium heat until a thick cream sauce forms, about 2 minutes.

Step 3:
Whisk in tomatoes, salt and black pepper and mix well. Let soup simmer for about 10 minutes.

Step 4:
While soup is simmering, assemble grilled cheese sandwiches, using two slices of cheese per sandwich. Melt 2T of butter in large skillet over medium heat. Cook two sandwiches at a time in the pan, cooking one side until golden brown and then flipping them.

Step 5:
Serve soup with hot grilled cheese.
