Sausage Jambalaya

Ingredients

  1. 2 T Canola Oil, divided
  2. 1 pkg Smoked Sausage, cut in slices
  3. ½ bu Green Onion, sliced thin
  4. 1 ea Small Green Pepper, seeded and diced
  5. 1 stalk Celery, diced
  6. 2 clove Garlic, chopped fine
  7. 1 T Cajun Seasoning
  8. 1 T Tomato Paste
  9. 1 can Crushed Tomatoes
  10. 1.5 cup White Rice
  11. 1 ea Bay Leaf
  12. To Taste Kosher Salt and Black Pepper.

Directions

Step 1:
In a large, wide pot, add 1 T canola oil over medium high heat. Add sliced sausage to pot and cook until sausage starts to brown, about 3 minutes.

Step 2:
Add green onions, celery and green pepper to pot, cook until vegetable tenderize, about 2 minutes. Add garlic and Cajun seasoning, cook an additional 30 seconds.

Step 3:
Add 1 T of canola oil and tomato paste to pot and stir into sausage vegetable mixture. The tomato paste should start to stick to the bottom of the pan and brown slightly. Add rice to pot and stir around to coat in fat.

Step 4:
Turn heat down to low, add 2 cups of water, crushed tomatoes and bay leaf, stir well to get all the flavor off of the bottom of the pan. Bring to a simmer and cook until rice is tender. Stir often to prevent sticking.

Step 5:
When rice is tender. Adjust seasoning with Kosher salt and black pepper.
